I received my copy in 1985 from an unimpressed boyfriend. Back then Delia had freckles and a brown blouse. I had to chuck my book out after nearly twenty years. I hadn't really referred to it for about ten years and it was a bit of a health hazard but by the time it was gone it truly had served its purpose so I don't feel the need to buy another. I followed her recipes and they worked and I followed them so often that eventually I didn't really need to. Now I buy recipe books for ideas rather than the cooking instructions. I see she's gone soft focus on the cover and updated her book. Food is clearly so much more multicultural than when this book first came out but I hope it hasn't lost its true strength which is to train us in the fundamentals of all aspects of cooking, leaving us sufficiently experienced and equipped to tackle the shortcomings of some of our trendier recipistas.

I have found Delia's Complete Cookery Course book great, especially for the "simple" things like roast chicken and potatoes which I never learnt to make. I don't use many of her other recipes because I find the lists of ingredients too long, but the introductions into various ingredients are great. I live in New Zealand and my only criticism is that, especially with things like fish, I have no idea what the equivalent of the British things are called over here. But it's certainly a book worth owning!

I have the volumes seperately and will say that although well done, they are indeed like a course. If you want just a cook book these are too detailed and technical, and if you want a course, probably not detailed or technical enough. Now,if you don't know what you want, well then, they are perfect. Addition to my previous review: with much use, I have slowly built up the necessary equipment for many of the recipes in the book. if you are patient and do not require a lot of assistance- this book can be very helpful. I am slowly going through it section by section as intended and have become much more accomplished at cooking techniques as a result. I would upgrade my rating (if the computer would let me) from 3 to 4 stars.

A great book to keep handy for making use of new ingredients, trying out new recipes and for gaining new insights into familiar dishes and ingredients. This book explains how to make a variety of dishes for all levels of cooking skill and, most importantly, starts each section with an explanation of the main ingredients and techniques. This makes it highly recommended for anyone interested in broadening their range of dishes and developing new varients on those they already know. Certainly worth having on your bookshelf and contains something suitable for all occasions from the complete menu to a simple snack.
