I've only been a vegetarian for six months. This book has many great recipes but after enjoying using it for a while, I discovered that there is no such thing as vegetarian parmesan cheese. All parmesan contains rennet, which comes from the stomach linings of slaughtered newly born calves.
As a vegetarian, this notion is repulsive to me, so why does this 'vegetarian' cook book seem to use parmesan cheese on every other page?
There is a paragraph in the appendix all about parmesan cheese but there is no mention of rennet or it's origins. This book should not be marketed as a vegetarian cook book.

I have been vegetarian for over 25 years, and have run through the gamut of Rose Elliot, Diet for a Small Planet, Moosewood, Greens, Millennium, you name it. This book is in a different league. I received it as a gift, and it is now my favorite cookbook. The recipes are nutritious, flavorful and colorful. No pretensions or politics, just inspiring, clear and artfully simple recipes. This is a book that celebrates the beauty and flavor of vegetables, and even my kids like it!

Not only are the recipes delicious and relatively simple, but the author tells you how to make types of dishes, such as risotto and polenta. And, if you follow his instructions, by George, it turnes out perfectly. I never made either risotto or polenta before, and now I make them all the time. I've given this book as a gift twice and probably will give it again.

Jack Bishop reveals himself as a culinary genius when it comes to flavorful vegetarian cooking. Not many of the various cookbooks I own deserve a five star rating, but this one definitely ranks in the upper echelons. The recipes provide full-flavored and well-rounded meals by drawing on very short shopping lists. Bishop has made me one very happy vegetarian who always comes back to his book to discover some new, exciting flavors. I can recommend this cookbook without any reservations to anyone.
